Inside the executive lounge of the Courtyard by Marriott Iloilo, Cosmo Iloilo style maven JM Tiongco-Caram marked a milestone birthday with her husband, Abbie Caram, hosting a tightly curated evening that felt equal parts society dinner and insider indulgence.
Flying in from the United States for the occasion was Abbie’s mother, jet-setting businesswoman Cora Buffa, who was warmly received by JM’s parents, Dr. Napoleon Tiongco Jr. and society fixture Shiella Marie Golez-Tiongco.
The culinary tableau set the tone early, with guests gravitating toward a dramatic spread of imported cheeses—creamy burrata and molten baked brie—paired with fresh figs, champagne jelly, and plump grapes.
From there, the menu deepened into indulgence with foie gras bonbons, salmon finished with lemon crème and caviar, and a porcini mushroom and black truffle risotto that anchored the evening.
Flowing freely were Italian pours, including Masi pinot grigio, Bisol prosecco, and a polished selection of digestifs such as Amarone and limoncello.
Stealing hearts without trying was Chance, the couple’s young son, who emerged as the evening’s quiet star.
