Freddy’s Bar returns with nostalgic Iloilo soirée

Warm lighting, familiar flavors, and the easy rhythm of old friendships filled the Vermillion Hotel as Freddy’s Bar and Restaurant—one of Iloilo’s defining social destinations of the 1990s—made its much-anticipated return.

The revival drew longtime patrons who remembered Freddy’s not simply as a watering hole, but as a gathering place where the city’s personalities, friendships, and nightlife converged.

Rather than recreating the past note for note, the evening captured its spirit through relaxed conversation, a lively crowd, and servings of Freddy’s original hors d’oeuvres.

Ronald Perez, Trina Ascalon, Carla Perez, Melitza and Anthony Trinidad, and Kathrina and Rowell Cervan were among those trading stories and rediscovering the convivial atmosphere that once made the venue a city favorite.

Across the room, Kristen Trinidad, Peachy Salcedo, Chepet Solivar, Eve Marie Ganzon, Rara Ganzon, and Sylvia del Rosario-Yap settled into the evening with the ease of loyal partymates returning to a familiar table.

Dr. Putli Fuerte and Ria Cordero were seen enjoying dinner, while public relations professional Toots Jimenez added his unmistakable energy to the gathering.

Other guests included Michael Koopsman, Vin de Leon, Gigi Dolar, Jade de Asis, Claudette Talamera, Eugene del Rosario, Frances Ballarta Bouille, Julius Fabula, Hershy Jesena, Richard Peache Pechangco, Maui Espejo, Gerome Podolski Espejo, Joy Sy, and Jamela Legaspi Quilantang.

At the center of the celebration was the food, with Freddy’s original hors d’oeuvres serving as edible reminders of evenings when a well-prepared bite and a well-mixed drink could keep a table occupied for hours.

Vermillion Hotel banquet service manager Jonavan Catahay, Executive Chef Donald Patolot, and acting operations manager Rechie Estalane welcomed the enthusiastic response to the revived concept.

By the close of the evening, Freddy’s had done more than reopen its doors—it had restored a cherished chapter of Iloilo’s social history and given a new generation a place to continue the story.
